First, I don't know how many leagues you have opened in FM2007
Second, I don't know your computer configuration.
Third, I don't know how large the database you are using.

As a result, nobody can answer you precisely.
What I can say is "you can open as more as possible"...  but usually 5 nations with 13 - 14 leagues with large database will have no problem.
